March Madness Menu

March Madness is such a great celebration! I love watching the games and seeing the thrill in the eyes of the college kids as they cheer on their school! Since I’ll be watching the games on television and not in person, I need to make some plans for delicious and impressive March Madness menus.

Coca Cola Cake is a recipe I tried first back in the 70’s. My aunt made this sweet and easy cake and we all fell in love with it. It uses 2 cans of Coke and lots of butter. Made in a 13 x 9 pan it’s easy to serve and will be gone quickly.

Veggies with Humus and Guacamole – Things that can be dipped are always popular at parties. Pick up your favorite Humus and Guacamole at the store. Slice and chop plenty of gorgeous and healthy vegetables to share.

Bowl of Tangerines – Keep going with the round orange basketball theme by setting out some healthy fruit. Kids love peeling these sweet little treats and they’ll be getting natural sugar.

Dip or Dunk? – Dip cookies in orange-dyed white chocolate and then line to look like a basketball. You can dip Oreos or one of my favorites: vanilla wafer sandwich cookies (Use peanut butter). When you dip those in white chocolate they are absolutely delicious!

Dipped Pretzel sticks in your school colors – Use white chocolate and gel colors, mix these together after heating in the microwave. Then dip long pretzel logs into the chocolate mixture. Add sprinkles, if you like. Lay them on wax paper to try. Serve these good treats on a platter!

Potato Logs – Slice large baking potatoes length-wise. Spray cooking spray on baking sheet. Lay potatoes on baking sheet and drizzle with a little oil. Season as you like: salt, pepper, red-pepper flakes, chili powder, garlic powder? Set oven to 400 and set timer for 30 minutes. Watch them and remove them from the oven when they are golden brown. Delicious served with ranch dressing or ketchup.

Ham and Cheese Sliders – These are always popular and you’ll be surprised at how fast these sandwiches are gobbled up. If you have plenty of ingredients, you can make up another batch rather quickly.

Fruit and Cheese Charcuterie Board – Kelleynan.com has created a beautiful charcuterie board with fruit and cheese. Of course, you can arrange it any way you like and select fruits and cheeses that you’ll enjoy.
